Pietro Polles was born in a small town called Pasiano di Pordenone located in the Friuli region of northern Italy. After retiring in 1998, after working at the World Bank for 26 years, he went back to Italy to submerge himself in the art of cooking and of wine making. As a young man, Pietro, had already spent hours a day cooking with his grandmother or working with his parents in their own vineyard. However, he now wanted to supplement all that knowledge to fulfill his lifelong dream of having his own Italian restaurant. After attending “Corso di Cucina” at IAL cooking school in Aviano, Italy and brokering a deal to import his own wine called Pietro’s Merlot, Pietro opened Sorriso Restaurant in 2004.
Rosemarie Polles, was born in small town called Greenock, Scotland. After working at the IMF for 36 years, she retired in 2008 to help her husband Pietro, at Sorriso. Upon entering its doors, you will find Rosemarie immediately greeting you with a friendly “hello” and a warm smile as hostess of Sorriso Restaurant.
Stefano Polles is the son of Pietro and Rosemarie Polles. Stefano, the Head Pizzaiolo of Sorriso, has earned a History degree (with honors) from Brock University in Ontario, Canada, and has attended the prestigious Scuola Italiana Pizzaioli in Caorle, Venice in 2004. There, he received another diploma (Master’s Degree) in pizza making. He continued his training in San Sansepolcro, Tuscany under the tutelage of Danilo Pagano, the current captain of the Pizza National Team. Upon his training, he returned to Washington to take over the pizza operation at his father’s restaurant. Recently, Stefano also earned a degree in gelato making at the Carpigiani Gelato University, in Bologna, Italy. You can find his entire repertoire of gelato flavors at their newly opened Café Sorriso in Woodley Park.
Isabella Polles is the daughter of Pietro and Rosemarie. Isabella waitressed at Sorriso Restaurant for 5 years, but has now opened up a trendy vintage consignment store called Via Gypset. It is located in Woodley Park, DC, directly above Café Sorriso. Isabella, still frequents Sorriso to enjoy her favorite off the menu dishes that her father is more than happy to prepare for her.
